Arriving in Cary, North Carolina in 1994, Pennsylvania native Margie Hennessee traded in her BA in communication studies from Thiel College for a career in the hospitality industry. Raised in a large Irish family, dinner was not just eating, but a time to come together and share the days events. Inspired by a friend attending culinary school, Margie found that her passion for cooking and sharing food with others developed a sense of community. Along the way, she forged many bonds that shaped both her private and professional life.
As Chef and co-owner, (along with her husband Will) of Maximillians Grill and Wine Bar, Margie focuses on the combination of locally sourced ingredients paired with spices, herbs, and aromatics that are global in reach. Inspired by an eclectic mix of textures, flavors and sensations, while honoring the commitment to food that is local, fresh, and approachable.
When she is not in the kitchen, Margie gives her time, energy and spirit to many local charities and is actively involved with the Ronald McDonald Children’s House. Travel, reading and the need to try new things inspire her desire to fill the need locally for contemporary flavor with an edge. Forming the distinctive and sublime creations that help form both the passion, and pleasure that have become Maximillians.
