Meet Chef Tim Coyne – Bistro By-The-Sea in Morehead City
Chef Tim began his culinary career at age 14 yrs. old as a dishwasher in his relative’s Italian restaurant in the Detroit, MI area. Like all aspiring chefs, Chef Tim worked his way up the restaurant “food chain” to be a line cook.
To further his culinary background, he attended Schoolcraft Community College & completed the Certified Working Chefs program in May of 1981.
Chef Tim’s next stop was the Golden Mushroom Restaurant in Southfield, MI working under Certified Master Chef Milos Cihelka who was one of only 13 Master Chefs in the world at that time. For the next several years, Chef Tim worked in various restaurants to learn as much as he could about the diverse culinary arts field-ethnic, chains & private dinner clubs.
Like the majority of all chefs, he dreamed of owning his own restaurant one day. Thus the move from MI to the coast of NC in the Fall of 1992 to become the Executive Chef at the Sheraton Hotel in Atlantic Beach.
In May of 1993, he & his wife, Libby Eaton, opened the 50 seat, Bistro By-the-Sea in Atlantic Beach. After 4 years of tremendous growth, they purchased land & built a new 3000+ sq. ft. restaurant including a piano bar in Morehead City in May 1997.
Chef Tim & Libby Eaton believe in made-to-order, fresh and local ingredients when possible. Founding board members of Carteret Catch, a nonprofit, educational organization to brand & promote Carteret Co.’s commercial seafood industry, Carteret Catch seafood is featured on their daily features.
The couple’s mantra is, “No one will run your business like you do,” so the Bistro is opened Tues.-Sat. for dinners only. Chef Tim will always be “on the line” cooking with his staff to ensure that the consistency that the Bistro is known for will continue with every dining experience. Come Taste the Difference!
